Balblair Distillery

You'll smell the whisky before you see it. Walking up to Balblair Distillery near Tain, that warm grain-and-oak aroma wraps around you like a blanket, and you know you're in for something proper. This is a working Highland distillery that's been at it since 1790, which means the people here know what they're doing.

The tour itself is straightforward - no fancy theatrics, just the real business of making whisky. You walk through the copper stills, see where the magic happens, and understand why the water from the local springs matters so much. The tasting at the end is where it clicks into place. Their house style is fruity and floral, quite different from the heavier sherried whiskies you might expect from up here.

It's not a massive operation, which is partly why it works. You're not herded through with 200 other people. The staff actually chat to you, answer questions properly, and don't make you feel rushed. Bring the teenagers if they're interested in how things are made - the chemistry bit resonates with some, though the under-16s will find the tasting room a bit dull.

Allow a couple of hours including the tour and a drink. Check the website for times before you go - opening hours do shift seasonally. If you're staying at Dornoch Firth Caravan Park down the road, this is worth the short drive. Much better than another afternoon of fairground rides.
