You'll see everything from the execution chamber to the cells where inmates carved their names into the stone. Allow a couple of hours if you want to do it properly and chat with the staff. Families with teenagers tend to get more out of it than younger kids, who find it a bit heavy going after the first twenty minutes. Stirling itself is brilliant for a park-based break - Witches Craig is just up the road and makes a solid base for exploring the Old Town, the castle, and the Wallace Monument.
