The Wye Valley has been producing cider for centuries, but Hive Mind takes things in a different direction altogether - they're making mead here, proper traditional stuff fermented from honey rather than apples. It's a small operation tucked away near Chepstow, and the whole place has that workshop feel where you can actually see what's going on rather than being herded through a corporate visitor centre.

What you're doing here is tasting mead in various stages of fermentation, learning how they source their honey locally, and understanding why this ancient drink is having a moment again. The flavours are nothing like supermarket mead - dry, complex, sometimes herbal depending on what they've infused it with. If you've only ever encountered mead at a Renaissance fair, this will genuinely change your mind about it.

It works best for adults with a genuine interest in fermentation and artisan drinks rather than families with restless kids. You'll want a good couple of hours minimum if you're tasting properly and chatting with whoever's about. Go mid-week if possible - weekends get busier and the experience feels less personal.
