Auchroisk Distillery

The smell hits you first when you walk into Auchroisk - that distinctive combination of barley, oak, and something indefinably Scottish that no photograph can quite capture. This working distillery sits just outside Keith in Aberdeenshire, and it's the kind of place where you can watch whisky actually being made rather than just read about it on a label.

The tour takes you through the production process from grain to glass. You'll see the massive copper stills, learn why water matters more than most people realise, and understand why the timing of each stage is absolutely critical. What surprised me most was how hands-on the whole operation is - this isn't some museum piece frozen in time. Staff are genuinely knowledgeable without being preachy about it.

You'll want a couple of hours here minimum, longer if you're serious about whisky. The tasting at the end is proper generous, and they don't rush you through it. Families with older kids (ten upwards) will manage fine, though the younger ones might find the technical bits a slog.

If you're staying at Cairnty Lodges just down the road - only twenty minutes away - you've got a cracking spot to base yourself. The hot tubs are a nice touch after a few drams. Hillhead Hideaways offers a quieter alternative if you want more space. Both give you easy access to the wider Speyside whisky trail, though Auchroisk itself deserves the full visit rather than a rushed pit-stop.
